Why self-study stalls on writing and speaking
Reading and listening are self-checking. There is a correct letter, and you either picked it or you did not. Writing and speaking are not like that. The HSK grades essays and spoken answers against a rubric that weighs content, grammar, register and length, and no answer key can tell you where your own essay lands on that scale.
A teacher or tutor can. Most people studying alone do not have one looking over every practice essay, which means most self-taught learners walk into the real exam never having received an actual grade on the two sections they are least sure about. You can drill vocabulary for months and still have no idea whether your writing would pass.
The exam itself does not feel like most practice material
Grading is one half of the problem. The other is that the real test does not run the way most practice material does. The official HSK runs on a strict clock, and the listening section plays each clip a set number of times and does not repeat. Most free practice tests are untimed, and if there is audio at all, you can usually replay it as often as you like.
That is fine for learning words. It does not prepare you for the two things that actually rattle people on test day: working against a clock, and hearing something once with no chance to hear it again.
